Fine flavoured cocoa

In the world market, a distinction is made between »bulk cocoa« a and »fine flavour cocoa«. Only about 10% of the world's harvest is made up of rare and precious fine flavour cocoas, which are characterised by extraordinary fine and characteristic aromas. However, best quality can only be achieved with pure fine or flavour cocoas. Their diverse, intensive aroma is unique and shape the taste of a pure, high-quality chocolate. The difference is determined by the cocoa variety, climate and its origin - the terroir. Fine flavour cocoa is characterised by its variety, harvesting at the right time (otherwise the aroma notes are missing), a post-harvest adapted to the variety and, of course, gentle roasting and processing. Fine flavour cocoas thrive in a narrow band 20° north and south of the equator: in Central and South America, the Caribbean, Madagascar and some Pacific islands.
